The evidence
Why EVOO.
The most-studied fat in the human diet, organized by the markers already on your dashboard. Trials cited as proof, cohorts labeled as associations.
01 · All-cause mortality
19% lower all-cause mortality.
Across 92,383 U.S. adults and 28 years, more than half a tablespoon a day was associated with a 19% lower risk of dying — at a dose one bottle exceeds.
HR 0.81
Highest intake vs. rarely · JACC 2022
02 · ApoB · LDL · blood pressure
31% fewer major cardiovascular events.
Oxidized LDL — not just the count — drives plaque. Polyphenols protect LDL from oxidation, and the outcomes follow.
HR 0.69
Major CV events · PREDIMED · NEJM 2018
03 · Brain · APOE ε4
28% lower dementia-related risk.
More than 7 g a day, over 28 years — irrespective of diet quality. ε4 carriers face 5–9× the dementia mortality of noncarriers; the association held after accounting for it.

04 · Inflammation
A powerful natural anti-inflammatory.
Oleocanthal inhibits the same COX enzymes as ibuprofen, with strikingly similar potency. The peppery sting in the throat is the compound itself — sensory proof of the mechanism.

PREDIMED — primary prevention of cardiovascular disease
A Mediterranean diet supplemented with EVOO reduced major cardiovascular events in high-risk adults — hazard ratio 0.69.

High-polyphenol EVOO and blood pressure
Peripheral and central systolic blood pressure fell 2.5 and 2.7 mmHg — the cleanest trial isolating the polyphenol level itself.

High-polyphenol EVOO and glycemic control
Significantly reduced fasting plasma glucose and HbA1c, along with BMI and body weight.

Olive polyphenols and insulin sensitivity
15% better insulin sensitivity and 28% better β-cell responsiveness — via olive-leaf extract, so evidence for the polyphenol class, not the oil itself.

JACC · 2022
Olive oil and total mortality
More than 0.5 tbsp/day associated with HR 0.81 for all-cause mortality — 19% lower risk versus rarely consuming it.
JAMA Netw Open · 2024
Olive oil and dementia-related death
More than 7 g/day associated with 28% lower risk, irrespective of diet quality — and it held after accounting for APOE ε4.

Ibuprofen-like activity in extra-virgin olive oil

Approved only for oils with ≥250 mg/kg hydroxytyrosol and derivatives — polyphenols protecting LDL from oxidative damage. Our oil tests at 750+.
How to read this
The randomized trials are causal evidence; cohort findings are associations, so we say "associated with." The insulin-sensitivity trial used olive-leaf extract — polyphenol-class evidence, not the oil itself. Most protocols dose 7–50 g of EVOO daily; one bottle delivers roughly 27 g.
